Ingredients

  • 8-10 chicken drumsticks
  • 2-3 tablespoons olive oil
  • 2 tablespoons salt
  • 1 tablespoon black pepper
  • 2 tablespoons garlic powder
  • 2 tablespoons onion powder
  • 2 tablespoons paprika smoked paprika recommended
  • 1 tablespoon dried oregano
  • 1 teaspoon cayenne pepper optional

Equipment

  • baking sheet
  • Parchment paper or foil
  • Wire rack (optional)
  • Large bowl
  • small bowl
  • paper towels
  • sharp knife
  • Meat Thermometer

Method

  1. Preheat oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper or foil. Place a wire rack on top of the baking sheet for extra crispiness.
  3. Pat the chicken drumsticks thoroughly dry with paper towels.
  4. Trim any excess or loose skin from the drumsticks.
  5. Optional: Lightly score the skin a few times with a sharp knife, being careful not to cut too deep into the meat.
  6. In a small bowl, mix together salt, black pepper, garlic powder, onion powder, paprika, oregano, and cayenne pepper (if using).
  7. Place the drumsticks in a large bowl and drizzle with olive oil. Toss to coat evenly.
  8. Sprinkle the spice mixture over the drumsticks, making sure to coat all sides. Use your hands to rub the seasoning into the skin, massaging it in well.
  9. Arrange the seasoned drumsticks on the prepared baking sheet, leaving a little space between each drumstick.
  10. Bake for 40-45 minutes, or until the internal temperature reaches 165°F (74°C). Use a meat thermometer to ensure they're fully cooked.
  11. Optional: Flip the drumsticks halfway through baking for extra crispy skin.
  12. Optional: For the ultimate crispy finish, broil the drumsticks for the last 2-3 minutes of baking. Watch them carefully, as they can burn quickly.
  13. Remove from oven and let rest for a few minutes before serving.

Notes

For extra crispy skin, make sure to pat the drumsticks completely dry before seasoning. Using a wire rack allows air to circulate around the drumsticks, promoting even crisping. If the drumsticks are browning too quickly, tent them with foil. Store leftover drumsticks in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven, microwave, or air fryer. Consider marinating the drumsticks for at least 30 minutes or up to overnight for more intense flavor. Honey Garlic, BBQ, and Lemon Herb are delicious variations to try.
